There is another very handy FREE program called SUPER that can convert to/from almost any audio/video format and/or extract the audio or video. TAudioConverter might be worth a try too. With Audacity, you'll need to install the optional FFMPEG library in order to open Dolby AC3 files. (The audio editor will open the audio and ignore the video.) The VOB files are MPEG-2 video multiplexed with audio in one of the DVD compatible formats. You'll need to convert your ISO file back to the standard DVD format (or burn a DVD) to get a normal DVD structure with a VIDEO_TS folder containg VOB files, etc.

I don't know how to get anything out of an ISO file. If it's any other format, i split with appropriate software (usually invloves the command line), sometimes use a container format. If it's PCM, i open the file with Audacity (Important: disable dithering in the settings), split and export to FLAC. It can be one of several formats, only one of them is lossless: PCM (or WAV).
